0.25 cup margarine , softened (4 tbsp)
1.25 tsp Equal packets
0.25 cup liquid egg substitute (or 2 egg whites)
0.75 cup unsweetened applesauce
0.33 unsweetened apple juice frozen concentrate , thawed (1/4 cup, or about 1/3 of can)
1 tsp vanilla extract
1 cup white all purpose flour
1 tsp baking soda
0.5 tsp ground cinnamon
0.25 tsp salt (optional)
1.5 cup old fashioned rolled oats
0.33 cup seedless raisins , chopped


Directions
1 Heat oven to 350 degrees F. Spray cookie sheets with vegetable oil cooking spray (lightly).
2 Beat together margarine and sugar substitute until creamy. Beat in egg substitute. Add applesauce, apple juice concentrate, and vanilla; beat well.
3 Blend in combined flour, baking soda, cinnamon, and salt. Stir in oats and chopped raisins.
4 Drop by rounded teaspoonfuls onto prepared cookie sheets. Bake 15 to 17 minutes or until cookies are firm, remove to wire rack.
5 Cool completely. Store in airtight container.
Additional Information
For variety, add some chopped nuts.
