Ingredients
24 oz extra lean beef tenderloin (4 (6 ounce) steaks)
0.75 tsp kosher salt , divided
0.75 tsp black pepper , divided
1 red onion , thinly sliced
2 tbsp Oil, olive, extra virgin , divided
0.25 cup balsamic vinegar
2 tbsp crumbled gorgonzola cheese


Directions
1 Rub steaks with 1/2 teaspoon salt and 1/2 teaspoon pepper, cover, and chill.
2 Place onion slices on a baking sheet lined with aluminum foil and coated with cooking spray. Drizzle with 1 tablespoon olive oil, the vinegar, and the remaining salt and pepper. Toss to coat.
3 Bake onions, stirring occasionally, at 375 degrees F for 20 minutes (onions should be tender). Remove from oven but keep warm.
4 Cook steaks in the remaining 1 tablespoon olive oil in a large skillet coated with cooking spray 5-7 minutes per side over medium-high heat. Top steaks with onion mixture and cheese.
