Ingredients
3 oz fat free cream cheese
3 oz goat cheese
0.25 cup sun dried tomatoes , softened and chopped (not in oil)
4 whole wheat tortillas (6-inch)
3 tbsp fresh mint , chopped


Directions
1 Mix cheeses and sun-dried tomatoes in small bowl.
2 Spread mixture over half of each tortilla and sprinkle with mint.
3 Fold tortillas in half.
4 Cook in large skillet over medium heat until browned, 2 to 3 minutes on each side.
Additional Information
Perfect as a light lunch, teamed with a soup or salad. Or cut into wedges and serve as an appetizer served with Tropical Salsa.
