Ingredients
1 cup fresh chopped onion
2 medium garlic cloves , minced
1 tsp ground ginger
1 tsp ground turmeric
1 tsp chili powder
1 lb round roast, lean , trimmed and cut into 1/2-inch cubes
1 cooking spray
16 oz canned whole peeled tomatoes , undrained and chopped
1 cup cold water
2 tsp low sodium beef bouillon


Directions
1 Begin by combining the onion, garlic, ginger, turmeric, and chili powder in a medium bowl. Add roast, stirring to coat, and then refrigerate for 2-3 hours covered.
2 In a large saucepan covered with cooking spray, brown the roast. Stir in the tomatoes, water, and bouillon granules, and then bring to a boil. Reduce the heat, and simmer partially covered for 1 hour.
3 Uncover and then continue to simmer for an additional 30 minutes, or until the meat is tender and the liquid has reduced.
Additional Information
This beef serves great hot over cooked rice that had been prepared without salt or fat. Just be sure to adjust your nutritionals accordingly if you choose to do so.
