Ingredients
6 floz vegetable juice, low sodium (or tomato juice)
1 tbsp fresh chopped onion (any variety)
1 tbsp fresh chopped celery
1 tbsp chopped red bell peppers (any variety)
1 tbsp grated carrots
1 tbsp fresh cilantro , finely snipped (or 1 tsp dried, crumbled)
1 tsp fresh lemon juice
0.5 tsp sugar
0.25 tsp hot pepper sauce (or 1/2 tsp worcestershire sauce)
1 pinch black pepper


Directions
1 Combine all the ingredients in a jar with a tight-fitting lid.
2 Shake well, and refrigerate for at least 2 hours, allowing the flavors to blend.
Additional Information
Substitute other herbs such as parsley, mint, oregano, or tarragon for the cilantro in order to gain a range of flavored salad dressings.
