1 Place chicken in a resealable plastic bag set in a shallow dish. 2 In blender, purée mint leaves, lemon juice, oil, soy sauce, garlic, chilli powder, and pepper. 3 Pour over chicken. Seal bag and turn to coat chicken. Marinate in refrigerator 4 to 24 hours. 4 Preheat grill to medium. 5 Remove chicken and place chicken on the rack of uncovered grill. Discard marinade. 6 Grill 12 to 15 minutes or until tender and juices run clear. Turn once. 7 If desired, serve over hot cooked couscous, or with grilled green onions and garnish with additional mint leaves.
