Ingredients
4 piece Bread, French, small slice (or sourdough)
1 cooking spray
1 tbsp vegetable oil
6 medium garlic cloves , finely chopped
0.5 tsp ground cumin
0.25 tsp oregano leaves , dried
0.25 tsp ground cayenne (red pepper)
3.5 cup low sodium vegetable broth
1 pinch salt
1 tbsp fresh cilantro , finely chopped


Directions
1 Coat both sides of bread slices with cooking spray. Toast in a large frying pan over medium heat until lightly browned on both sides. Set aside in a warm spot.
2 Pour oil in a medium pot and heat. Sauté garlic over low heat 5 to 8 minutes or until garlic is tender and golden. Mix in cumin, oregano, and cayenne and cook 1 to 2 minutes. Pour in stock and let boil. Lower heat, place lid on pot, and let simmer 5 minutes. Sprinkle with salt.
3 Arrange bread in the bottom of soup bowls. Pour soup over and top with cilantro.
Additional Information
Try stirring a whole beaten egg into the soup to make a traditional Chinese egg drop soup just before serving. Also, try floating the toast on top and melting Gruyere cheese on top.
