1 Butterfly shrimp by cutting them down backs, being careful not to slice through. Rinse and dry shrimp and place open, cut sides down in a 9" x 13" baking dish. 2 In small bowl, combine lime juice, garlic, butter, and hot sauce. Spoon half of marinade over shrimp. 3 Place shrimp, open and cut side down on a hot grill. Shut lid and cook 2 to 4 minutes per side, shrimp should be pink and opaque, but not dry. Move shrimp to a serving platter. 4 In small saucepan, heat reserved marinade until boiling. Serve with shrimp. Season shrimp with salt, if desired.
