Directions
1 Heat butter in a large pan and add the garlic.
2 Gently fry 2 to 3 minutes, until softened, then add peas.
3 Cook for 1 to 2 minutes more, then pour in the stock.
4 Bring soup to a boil, then reduce heat to simmer.
5 Cover and cook for 5 to 6 minutes (until peas are tender).
6 Leave to cool slightly, then transfer the mixture to a food processor and process until smooth.
7 Return the soup to the pan and heat through gently. Season with salt and pepper.
Additional Information
Note: You may have to do this in two batches. This recipe is quick and easy. We always have the ingredients in the house and its great with crusty bread.
