Ingredients
2.25 lb top loin pork roast , rolled boneless
1 tbsp vinegar
2 medium garlic cloves , thinly sliced
0.5 tsp salt
0.5 tsp black pepper
1 cooking spray
1 tbsp fresh sage (as desired)
1 tbsp fresh oregano (as desired)
1 tbsp fresh rosemary (as desired)


Directions
1 Preheat oven to 350°F.
2 Spread roast onto cutting board and remove any excess fat.
3 Roll roast into a long cylinder and tie together with twine, at 1" intervals.
4 Massage roast with vinegar. Slice numerous 1"-deep pockets into surface and fill slits with garlic slices. Season with salt and pepper.
5 Lightly coat baking pan with cooking spray, place pork on pan and bake 2 hours, or until meat thermometer reads 180°F.
6 Sprinkle herbs over roast and serve.
