1 Preheat oven to 350°F. 2 Spread roast onto cutting board and remove any excess fat. 3 Roll roast into a long cylinder and tie together with twine, at 1" intervals. 4 Massage roast with vinegar. Slice numerous 1"-deep pockets into surface and fill slits with garlic slices. Season with salt and pepper. 5 Lightly coat baking pan with cooking spray, place pork on pan and bake 2 hours, or until meat thermometer reads 180°F. 6 Sprinkle herbs over roast and serve.
