1 Peel the potatoes and cut each into 1/4-inch thick slices. With the tip of a sharp knife, create a pocket in each potato slice and insert 1 slice of garlic into each pocket. 2 Lightly coat the grill with the cooking spray and preheat for 5 minutes. Place the slices on the grill and sprinkle with the oregano, parsley, salt, and pepper. 3 Grill for 7-9 minutes, or until tender. 4 Serve.
