Directions
1 Bring 1 3/4 cups of water to a boil in a medium saucepan and add rice.
2 Set to low heat and cook for about 15 minutes until all water is absorbed.
3 Heat oil in a medium saucepan adding garlic and celery over medium heat for 1 minute. Add thyme, parsley, and spinach mixing for about 2 minutes.
4 Add cooked rice to spinach mixture and stir together.
