1 Spray a large soup pot with nonstick cooking spray. 2 Over low heat, saute the carrots, onion, and garlic until softened (about 5 minutes). 3 Except for the zucchini, add all other ingredients. Bring to a boil. Lower heat, cover and simmer until beans are tender (about 15 minutes). 4 Stir in zucchini and heat 3-4 minutes. Serve hot.
Additional Information
Double or triple the recipe, and store the extra in small microwavable containers and freeze. Also, frozen vegetables work well with this recipe.
