Directions
1 In a large 2-quart saucepan, combine the water, butter, chicken bouillon, garlic, and pepper. Cook over medium heat until mixture comes to a full boil. While boiling, add the carrots and return to a full boil. Continue to cook for 3 to 4 additional minutes.
2 Next, add the rice and reduce heat to low. Continue to cook covered for roughly 20 minutes, or until the rice is tender.
3 Gently stir in all remaining ingredients with a fork and serve.
Additional Information
You may also choose to microwave the rice. To do so, in 3-quart microwave-safe casserole combine the water, butter, chicken bouillon, garlic and pepper. Cover and microwave on high for roughly 4 to 5 minutes, or until the mixture comes to a full boil.
Next, Add the rice and carrots, cover, and then continue to microwave on high for 5 minutes.
Reduce the power to meduim and then microwave until rice is tender, about 10 to 15 additional minutes.
Stir in all remaining ingredients and cover. Let stand 5 minutes before serving.
