Ingredients
2 tsp olive oil
0.25 cup fresh chopped onion
2 medium garlic cloves , minced
2 cup fresh green beans , ends trimmed and sliced into 1-inch pieces
0.25 cup low fat unsalted chicken broth
1 medium tomatoes , diced
1 tbsp fresh oregano , minced
1 tbsp chopped parsley
1 pinch black pepper
1 pinch salt


Directions
1 Pour oil in a wok and heat over medium high heat. Stir in the onion and garlic and cook for 3 minutes, make sure garlic does not burn.
2 Pour in the beans and broth, place lid over wok and simmer for 3 minutes.
3 Mix in the tomatoes, keep lid on and continue simmering for 30 seconds. Sprinkle the oregano, parsley, pepper, and salt over mixture and simmer for 30 seconds.
Additional Information
Serve warm or chilled with rice or on its own.
