Ingredients
0.5 Cookies, vanilla wafer, fat free (about 12 wafers)
0.33 cup dry roasted unsalted peanuts , coarsely chopped
0.25 cup semi sweet chocolate chips (such as Hershey¨)
1 Pudding, vanilla, instant, serving (0.9 oz pkg sugar-free INSTANT vanilla pudding mix 4 serving size)
1 cup fat free milk
5 tbsp sugar
1 egg whites , beaten until foamy
0.33 cup Peanut Butter, creamy, reduced fat
1 tsp instant coffee granules (or espresso powder)
1 tsp vanilla extract


Directions
1 Combine cookie crumbs, peanuts, and chocolate chips. Divide in half and set aside.
2 Gradually add 1 tablespoon of sugar to egg white and beat until stiff peaks form.
3 Combine thoroughly with peanut butter, remaining 1/4 cup sugar, coffee powder and vanilla.
4 Stir in half of the cookie crumb mixture.
5 Spoon pudding mixture into individual dessert dishes or wine glasses and sprinkle remaining cookie crumb mixture over top. Place in freezer until firm.
