1.5 cup spinach tortellini (or other vegetable-filled frozen tortellini, 12 tortellini)
2 tbsp olive oil
1 olive oil cooking spray
0.25 cup chopped parsley
0.25 cup grated carrots
0.25 cup fresh chopped green onion (optional)


Directions
1 Bring a large pot of water to a boil. Add the tortellini, and cook until tender, about 10 minutes.
2 Heat oil in a sprayed nonstick frying pan. Add cooked tortellini and fry over medium heat for 1 to 2 minutes on each side, until golden brown.
3 Remove to serving dish, and drizzle with parsley, carrots, and onions.
