Ingredients
8 oz Baguette, sourdough, mini
1.25 lb Cheese, mozzarella, 1" cube , fresh
3 tbsp extra virgin olive oil
2 tbsp fresh thyme (or marjoram, sage, or oregano)
1 pinch salt and pepper


Directions
1 Preheat oven to 425 degrees F.
2 Slice baguette into slanted 1/3-inch-thick slices. Arrange pieces on a rack on a baking sheet and move to oven. Toast for 6 to 8 minutes or until lightly browned.
3 Meanwhile, take mozzarella out of liquid and lightly dry. Slice cheese into 1/4-inch-thick pieces, one piece for each slice of bread.
4 Take bread out of oven and lay one piece of cheese on each piece of bread. Lightly pour olive oil on cheese and season herbs, salt and pepper.
Additional Information
The bread can be toasted up to 4 hours in advance and kept in an airtight container. Use any variety of herbs you like and if desired, place bread and cheese back in oven for a few minutes until cheese is melty.
