1 Using a food processor or blender, puree cilantro, mint, cumin, lime juice, oil, red pepper, salt, and garlic until coarsely chopped. 2 Massage marinade onto chicken and put in a resealable plastic bag. Seal and let marinate in refrigerator for at least 15 minutes. 3 Preheat grill or broiler. 4 Take chicken out of bag and dispose of marinade. Arrange chicken on a cooking spray coated grill rack. Cook 6 minutes per side or until fully cooked.
