2 cup Ice Cream, vanilla, no sugar add, light , softened
1 Banana, medium, fresh , mashed
2 tbsp Coconut, dried, unsulfured, unsweetened, shredded , toasted
0.12 tsp vanilla extract (or banana extract)
8 peppermint, fresh, leaves (optional, for garnish)


Directions
1 Put the ice-cream into a bowl and fold in the banana, toasted coconut, and vanilla or banana extract. Keep in the freezer until ready to serve.
2 Divide the ice-cream between 4 dessert plates and garnish with mint.
Additional Information
If you'd like, pour on some sugar-free chocolate syrup to make this dessert a real treat!
