Ingredients
0.33 cup Shortening, vegetable, butter flavor (Crisco preferred)
0.5 cup sugar
1 eggs
1 tsp vanilla extract
2 cup white all purpose flour
2 tsp low sodium baking powder
0.25 tsp baking soda
0.25 tsp salt
0.25 cup low fat buttermilk
1 tsp sugar
0.25 tsp ground nutmeg


Directions
1 Heat oven to 375 F degrees. Spray a baking sheet with vegetable spray.
2 Combine shortening and sugar in large bowl; beat at medium speed with electric mixer until blended. Beat in egg & vanilla.
3 Combine flour, baking powder, baking soda & salt. Add alternately with buttermilk to creamed mixture at low speed. Mix well after each addition.
4 Roll dough to 1/2-inch thickness on lightly floured surface. Cut with floured 2-1/2-inch round cutter. Place on baking sheet.
5 For Topping: Combine sugar and nutmeg. Sprinkle over tops of tea cakes.
6 Bake at 375F for 7 to 9 minutes or until set. Remove to cooling rack. Serve warm or at room temperature.
