1 Preheat grill to medium. 2 Using a blender or food processor, pulse cilantro, almonds, jalapeño pepper, salt, pepper, and garlic for 15 seconds, or until finely chopped. 3 Add yogurt and lime juice, blend until creamy. Set pesto aside. 4 Place steak on grill, cook 6 minutes per side. 5 Remove steak from grill, allow to rest 5 minutes. 6 Slice steak diagonally, against the grain, into thin pieces. 7 Sprinkle cilantro over steak, serve pesto on the side.
Additional Information
The pesto is a good spread for burgers, sandwiches, or pizza. Also works well with fish.
