Servings
Ingredients
1.5 lb extra lean ground beef (5% fat)
1 medium onions , diced
2 medium garlic cloves , minced
0.25 cup chopped red bell peppers
0.25 cup chopped green bell peppers , or diced
0.5 cup frozen sweet corn kernels (or fresh)
0.5 cup chopped tomato , diced
3 tsp chili powder
1 oz ground cumin
3 low carb tortilla (10-inch) , cut in half, heated (or 6 6-inch tortillas)
1 cup Salsa (about 2 tablespoons per serving)
1 cup shredded cheddar cheese (or Mexican blend)


Directions
1 Heat ground beef in a large skillet over medium-high heat until fully cooked.
2 Using a slotted spoon, remove beef and reserve, leave 3 tablespoons of pan drippings in skillet.
3 Using the same skillet, combine the onions, garlic, and peppers and cook for 10 minutes.
4 Stir in the corn and tomatoes and sauté for 5 minutes.
5 Sprinkle the chili powder over and put the beef back in the skillet and cook for 1 minute.
6 Arrange the tortillas and top each with beef mixture; wrap and garnish with salsa and shredded cheese.
Additional Information
Variations: Use shrimp instead of the ground beef or use only vegetables.
