1 Heat ground beef in a large skillet over medium-high heat until fully cooked. 2 Using a slotted spoon, remove beef and reserve, leave 3 tablespoons of pan drippings in skillet. 3 Using the same skillet, combine the onions, garlic, and peppers and cook for 10 minutes. 4 Stir in the corn and tomatoes and sauté for 5 minutes. 5 Sprinkle the chili powder over and put the beef back in the skillet and cook for 1 minute. 6 Arrange the tortillas and top each with beef mixture; wrap and garnish with salsa and shredded cheese.

Variations: Use shrimp instead of the ground beef or use only vegetables.
