Ingredients
2 whole heads of garlic (2 whole bulbs)
1 olive oil cooking spray
3 medium onions , cut into wedges
2 large red bell peppers , cut into 1/2 inch thick slices
2 tbsp vegetable oil (or olive oil)
2 tbsp fresh lemon juice
2 tbsp chopped parsley
0.5 tsp salt
0.25 tsp black pepper
8 oz fettuccine , cooked and kept warm


Directions
1 Preheat oven to 400 degrees F.
2 Slice off 1/2 inch from top of garlic bulbs, revealing just the tips of the cloves. Cover bulbs with aluminum foil, loosely. Coat a baking sheet with cooking spray. Lay garlic, onions, and bell peppers on the pan and roast 15 to 20 minutes, until garlic is very soft.
3 Let garlic cool and squeeze pulp into a bowl. Mix in oil, lemon juice, parsley, salt, and pepper. Toss garlic sauce with pasta, onions, and peppers. Serve warm.
