Ingredients
16 oz boneless skinless chicken breasts (4 pieces)
0.25 cup bread crumbs
1 oz Cheese, feta, basil & tomato, 1" cube , crumbled
1 cooking spray
1.5 tsp margarine , melted
1 fresh spinach, 10 oz. package , torn
0.5 cup fresh basil , chopped
1 tbsp balsamic vinegar
1 tsp olive oil
0.12 tsp black pepper


Directions
1 Preheat oven to 400 degrees F.
2 Arrange each breast in the middle of 2 layers of plastic wrap. Using a meat mallet or heavy skillet, compress to 1/4 inch thickness.
3 Douse chicken in bread crumbs, making sure to coat evenly. Place 1 tablespoon of cheese onto each breast and roll chicken up. Arrange breasts on a cooking spray coated square baking dish, in one layer. Lightly pour margarine evenly over breasts.
4 Bake in oven for 25 minutes or until cooked through.
5 Mix spinach and basil in a bowl. Top with vinegar and oil and season with pepper. Serve chicken on top of salad.
Additional Information
Use different cheese for the stuffing. Top with stewed tomatoes for added flavor.
