Ingredients
7 oz matzoh meal (divided (3/4 cup plus 2 tbsp))
0.75 cup Nuts, almonds, blanched, whole
0.75 cup sugar
2 oz dried apricots , chopped (1/2 cup)
1 oz grated orange peel
0.25 tsp almond extract
3 egg whites


Directions
1 Preheat oven to 325°.
2 Place parchment paper on baking sheet and sprinkle with 2 tablespoons of matzo cake meal.
3 In food processor, pulse the almonds 3 to 4 times or until coarsely chopped.
4 Add 3/4 cup matzo cake meal and rest of ingredients to almonds. Pulse 3 to 4 times until combined. Mixture will be sticky.
5 Dust hands with matzo cake meal and divide dough into 16 portions.
6 Roll each portion into a ball, then form into pear shape. Place on baking sheet.
7 Bake at 325° for 20 minutes or until lightly browned. Cool on a wire rack.
