Ingredients
1 tbsp fennel seed
1 cup cold water , hot
1 fennel bulb , chopped (or celery)
0.5 cup chopped parsley , loosely packed
2 medium garlic cloves
1 oz walnut halves
3 tbsp cold water
1 tbsp olive oil
0.25 cup Cheese, parmesan style topping, reduced fat, grated
1 pinch salt
1 pinch black pepper


Directions
1 Soak fennel seeds in hot water 10 minutes; strain.
2 Using a food processor or blender, puree fennel, fennel seeds, parsley, and garlic until finely diced. Blend in walnuts, 3 tablespoons water, and oil and process until walnuts are chopped. Mix in cheese and sprinkle with salt and pepper.
Additional Information
This is great with pasta or over sliced tomatoes or mix into fat-free sour cream for a great veggie dip.
