0.5 cup vinegar
0.5 cup red wine (semi-dry)
1 tbsp paprika
3 medium garlic cloves , peeled and minced
0.5 cup chopped leeks , prepared the Enlitened way
0.5 cup fresh chopped onion , prepared the Enlitened way
1 tbsp potato starch
0.25 cup sweetener (sugar substitute)
2 tbsp sugar free apricot jam (optional)


Directions
1 In a small-medium bowl, mix all the ingredients together.
2 Place in a plastic bag with your choice of beef or poultry.
3 Shake until it is coated and refrigerate overnight, or for at least 2 hours.
4 Bake or cook the meat the way you would normally. Baste often during cooking.
Additional Information
This amount is good for 2-8 pieces of chicken or fish, or a 3-4 pound roast. Enlitened Onions: Heat 2 tablespoons oil together with cooking spray in a large non-stick skillet over medium heat for a few seconds. Add the leeks and onions; stir and lower heat. Cook until the leeks and onions start to brown, stirring occasionally. Add 3 cloves garlic and a few drops of water; the mixture will start to brown. Cook another few minutes, scraping the bottom of the pan so that nothing sticks.
