Ingredients
2 lb extra lean beef tenderloin , all visible fat discarded
0.25 cup dijon mustard
0.25 cup horseradish
0.25 cup fresh rosemary , chopped
4 medium garlic cloves , minced
2 tbsp black pepper , coarsley ground
1 tbsp onion powder
2 tsp olive oil


Directions
1 Preheat the oven to 400 degrees F. Stir together all ngredients, except tenderloin, in a medium bowl. Rub the mixture over the entire surface of the beef with a pastry brush, spoon, or clean hands.
2 Put the beef in a heavy nonstick roasting pan with a rack; then bake uncovered for 40 to 45 minutes for a medium-rare, 45 to 55 minutes for medium, or 55 to 65 minutes for well done.
3 Transfer the roast to a carving board; then cover with aluminum foil and let stand for 10 to 15 minutes before carving into thin slices.
