Salad
8 oz fresh spinach leaves
0.5 cup crumbled feta cheese (or goat)
0.25 red onion , thinly sliced
0.5 cup Cranberries, sweetened, dried, Craisins
2 tbsp sliced almonds , toasted (optional)

Dressing
2 tbsp Juice, orange, chilled
1 tsp grated orange peel (optional)
0.5 cup balsamic vinaigrette


Directions

1 Wash and clean spinach. Tear into bite size pieces and place in a serving bowl.
2 Add half of the feta or goat cheese and onion. Toss to continue.
3 Combine dressing ingredients in a small mixing bowl.
4 Pour over salad and toss to coat. Sprinkle with remaining cheese.
5 Top with dried cranberries and almonds. Serve immediately.
