Ingredients
1 lb tilapia fillets (or grouper or perch)
1.5 tbsp cajun seasoning (blackening)
1 tsp ground thyme
1 tsp paprika
0.5 tsp black pepper
0.25 tsp ground red pepper (cayenne)
1 cooking spray
1 tbsp canola oil
1 medium lemons , cut into wedges


Directions
1 Rinse the fish in cold water and pat dry.
2 Lightly sprinkle the fish with the blackening seasoning, thyme, paprika, black pepper, and ground red pepper, patting it in on both sides.
3 Coat a large cast-iron skillet (or other heavy-bottomed skillet) with cooking spray.
4 Add the oil and heat over medium-high heat until smoking hot.
5 Put the fish in the pan and cook, turning once, until just opaque throughout, about 2 minutes per side.
6 Serve with the lemon wedges for squeezing.
