Ingredients
6 fresh plum tomatoes , cut in half lengthwise and seeded
1 cup Cucumber, hothouse, fresh , peeled and chopped
0.5 cup medium green bell peppers , chopped
0.5 cup chopped red bell peppers
0.25 cup fresh chopped red onion
2 medium garlic cloves , peeled
15 fresh basil leaves
0.25 cup fresh lime juice
0.5 cup Juice, orange, fresh
0.25 cup red wine vinegar
5 tbsp extra virgin olive oil
1 pinch ground cayenne (red pepper) (to taste)
1 pinch salt
8 tbsp bread crumbs, toasted
2 floz vodka , freezer chilled


Directions
1 Using a food processor, place the tomatoes, cucumber, bell peppers, onion, garlic, and basil and pulse until finely chopped. Add the juices, vinegar, and oil. Pulse for 1 to 2 seconds to just blend.
2 Transfer to a covered container and refrigerate for a minimum of 2 hours or overnight. Taste for seasoning and add salt and cayenne pepper as needed.
3 To serve, place 1 tablespoon of the bread crumbs in each of 8 chilled serving bowls. Ladle in the gazpacho and float 1/4 fluid ounces of chilled vodka into each bowl. Serve immediately.
