1 Preheat oven to 350 degrees F and line a long loaf pan.
2 Put cola in a small saucepan and bring to a boil. Remove from fire, stir in dates and mix well until consistency is smooth. Add sugar substitutes and oil; mix.
3 Combine dry ingredients. Add to date mixture 1 cup at a time, stirring well between additions.
4 Beat egg well and add to mixture with the vanilla, almonds, and cinnamon.
5 Pour mixture into loaf pan and bake for 30-35 minutes. Test with a toothpick until it comes out clean.
6 Cool, wrap well and freeze or keep refrigerated. Slice when cold.
