Ingredients
Orange Curry Dressing
0.25 cup light mayonnaise (or fat-free)
2 tbsp frozen orange juice concentrate , thawed
1.5 tsp sweetener (sugar substitute) (Equal Spoonfuls)
1.5 tsp lowfat milk (2%)
0.5 tsp curry powder

Chicken Salad
0.67 cup fresh chopped celery
16 oz cooked chicken breast
1 cup red grapes (seedless)
1 cup canned pineapple chunks, drained
1 tbsp slivered almonds , toasted


Directions
1 For dressing, combine all ingredients, stirring with a wire whisk until blended. For chicken salad, combine dressing with chicken, grapes, pineapple and celery. Refrigerate, covered, 1 to 2 hours to allow flavors to blend. Just before serving,
