Ingredients
0.25 cup fresh lemon juice
1 tbsp curry powder
1 tbsp sesame oil (dark sesame oil)
1 cup plain nonfat yogurt
24 oz salmon fillet (6 ounce salmon fillets about 1 inch thick)
1 cooking spray
0.25 tsp salt
0.12 tsp black pepper


Directions
1 In a large resealable plastic bag mix lemon juice, curry powder, sesame oil, and yogurt. Place salmon in bag and seal. Move marinade around so all of salmon is covered.
2 Place bag in refrigerator and let rest for at least 20 minutes, no more than 1 hour. Take salmon out of bag and discard marinade.
3 Preheat broiler. Lay salmon on a cooking spray coated baking sheet and season with salt and pepper. Place under broiler and cook for 8 minutes, salmon should be flaky. Remove from heat and serve immediately.

Use this recipe for any type of fish or chicken. Serve over rice or pasta.
