Ingredients
10 oz Beans, lima, frozen
1 tbsp margarine
4 oz scallions , white and 1-inch green, sliced (about 1/2 cup)
1 tsp curry powder
0.5 tsp salt
0.12 tsp black pepper
0.5 tsp ground tarragon
4 pinch chopped parsley , sprigs flat-leaf parsley
2 cup fat free reduced sodium chicken broth
0.5 cup fat free milk


Directions
1 Thaw the lima beans and place in the bowl of a food processor or blender.
2 Add the margarine, scallions, curry powder, salt and pepper, tarragon, and parsley. Process until smooth.
3 Place the lima bean mixture into a pot. Pour the broth and milk. Bring to a simmer, cover and simmer for 10 minutes. If the soup is too thick add water to bring it the consistency of a thick cream soup.
Additional Information
Ladle the soup into espresso cups and serve as an aperitif.
