Dressing
0.25 cup reduced fat sour cream
0.5 cup light mayonnaise
2.5 tsp curry powder , preferably yellow curry powder
2 tbsp fresh cilantro , chopped
3 tbsp canned coconut milk

Salad
1 cup fresh chopped celery , diced
2 cup roasted lean ham, diced
0.5 cup fresh diced pineapple
0.5 cup chopped red bell peppers , diced
0.5 cup fresh chopped onion , diced
4 scallions , thinly sliced


Directions

1 Prepare the dressing first by blending all ingredients well. Set aside in the refrigerator for the flavors to marry while you gather the ingredients for the salad.
2 Place all of the salad ingredients in a large bowl and toss to blend.
3 Pour about half of the dressing over the top of the salad and stir to combine. Add the rest of the dressing or to taste. This makes ample dressing for the salad.
4 Chill for at least 1 to 2 hours before serving.
