Servings
Ingredients
1 lb Soybeans, edamame, shelled, frozen (green soybeans)
2 tsp canola oil
1 tsp sesame oil (dark sesame oil)
1 tsp curry powder
0.5 tsp ground coriander
0.5 tsp salt


Directions
1 Bring a pot of water to a boil and add in the edamame. Cook until bright green, about 5 minutes, drain.
2 Heat both oils in a large nonstick pan over medium high heat. Add in the curry and coriander, cooking until fragrant, about 30 seconds.
3 Stir in the edamame and cook for about 1 minute until well coated, stir constantly. Sprinkle with the salt and serve immediately.
Additional Information
Buy an extra bag of the edamame they work well as a healthy filling snack on their own. Edamame are a good source of fiber and make a great side dish when stir fried with curry and coriander.
