Servings
Ingredients
1 Cauliflower, head, small, 4", fresh , cut into florets (about 3 cups)
1 cup fresh chopped onion
1 tsp vegetable oil
1 tsp ground cumin
0.5 tsp ground coriander
0.5 tsp ground turmeric
1 pinch ground cayenne (red pepper) (or more to taste)
1 cup Yogurt, vanilla, nonfat
1 pinch salt and pepper (ground black pepper to taste)


Directions
1 Steam the cauliflower for 15 to 20 minutes, or until tender.
2 While the cauliflower cooks, saute the onions in the oil in a small skillet until golden.
3 Add the cumin, coriander, turmeric, and cayenne and cook, stirring often, for another 2 minutes.
4 Transfer to a blender or food processor, add the yogurt, and puree until smooth. Add salt and pepper to taste.
5 When the cauliflower is ready, remove it to a serving bowl, pour on the curried yogurt sauce, toss gently, and serve.
Additional Information
A snap to make, the curry sauce featured here can add spice and life to any steamed vegetable.
