2 Cucumber, fresh, medium
1 oz smoked salmon
8 oz Neufchatel cream cheese , at room temperature
0.5 tbsp fresh lemon juice
0.5 tsp black pepper (freshly ground)
1 tsp dried dill weed (optional)


Directions
1 Cut the cucumbers into about 1/4 inch thick slices and place on paper towels to drain while you prepare the salmon cream.
2 In a food processor, combine the smoked salmon, Neufchatel cheese, lemon juice, and pepper. Blend until smooth.
3 Fit a pasty bag with your choice of top and spoon the salmon cream into the bag. Pipe 1 teaspoon of the salmon cream atop each cucumber slice and garnish with dill, if desired.
