Ingredients
0.33 cup quick cooking brown rice
0.5 cup sliced white onion
1 cup chopped green bell peppers , sliced
0.75 cup Beans, black, canned , rinsed and drained
4 tsp canola oil
1 pinch salt , to taste
1 pinch black pepper , freshly ground, to taste


Directions
1 Boil rice in a saucepan with 2 to 3 quarts of water for about 27 minutes.
2 Add pepper and onion and boil until rice is finished cooking.
3 Drain rice.
4 Place the rice, black beans, and oil in a bowl and toss well.
Additional Information
PLEASE NOTE: This recipe contains canned beans. The nutrition facts given will be slightly inaccurate, because the analysis includes the salted water in which the beans are canned. When you drain and rinse these beans, you reduce the sodium content by about 40 percent.
