Ingredients
1 lb potatoes, fresh, medium , unpeeled
2 tsp Salt Substitute, no sodium
1 cooking spray
1 pinch salt , to taste
1 pinch black pepper , to taste


Directions
1 Preheat oven to 350 degrees Fahrenheit.
2 Slice potatoes into thick strips 3 to 4 inches long and 1/2 inch wide. Season with 2 teaspoons salt and let rest 10 minutes. Run potatoes under water and let dry very well.
3 Coat a baking sheet with cooking spray. Lay potatoes in one layer and coat with cooking spray, mixing to fully coat. Season with salt and pepper.
4 Bake 40 to 45 minutes, flipping halfway through.
Additional Information
For a variation, sprinkle Parmesan cheese or steak seasoning overtop.
