Servings
Ingredients
1 lb boneless skinless chicken breasts (4 breasts 4 oz. each)
0.33 cup yellow cornmeal
1 tsp chili powder
0.25 tsp garlic powder
0.25 tsp salt
1 tbsp white all purpose flour
2 egg whites , lightly beaten in a shallow bowl
2 tsp vegetable oil
0.5 cup salsa


Directions
1 Flatten chicken to 1/2 inch thickness by placing between 2 sheets of heavy duty plastic wrap and hit with a meat mallet or rolling pin.
2 In a small shallow bowl, mix the cornmeal, chili powder, garlic powder, and salt.
3 Sprinkle flour evenly over chicken then dip in egg whites then cornmeal mixture to coat.
4 In a large nonstick pan, heat oil over medium heat, add chicken and cook until done, about 5 to 6 minutes per side.
5 Serve each chicken breast with salsa.
Additional Information
If salsa is not your thing then try no sugar added strawberry applesauce.
