Ingredients
8 boneless skinless chicken breasts
1.25 cup low fat buttermilk (or nonfat plain yogurt)
1 cooking spray
5 cup Cereal, Corn Flakes
1 tbsp ground paprika
2 tsp cajun seasoning (or more to taste)


Directions
1 Preheat the oven to 400 degrees F.
2 Rinse chicken with cool water, pat dry, and place in a shallow nonmetal dish.
3 Pour the buttermilk or yogurt over the chicken and turn the pieces to cover fully.
4 Cover and refrigerate for 6 to 24 hours.
5 Blend the cornflakes in a blender or food processor, and put in a gallon-sized plastic bag with the remaining coating ingredients. Close the bag and shake well to mix.
6 Place 2 pieces of the chicken in the bag, and shake well to coat evenly. Repeat this process with all of the chicken.
7 Place the chicken on a baking sheet sprayed with nonstick cooking spray. Lightly spray each piece of chicken as well.
8 Bake for 50 minutes.
