Directions
1 Preheat the oven to 350 degrees F.
2 Use a large bowl, and stir together the oil, brown sugar, sugar, egg, egg white, and vanilla.
3 In a separate small bowl, combine the flour, cinnamon, and baking soda.
4 Add the flour mixture to the sugar mixture. Add the oats and pecans, mix well.
5 Coat a cookie sheet with non-stick cooking spray and drop cookie batter by rounded teaspoonfuls onto baking sheet.
6 Bake for 10 to 12 minutes, or until lightly browned. Remove from oven and let cool on wax paper.
