Directions
1 Combine the dry pudding mix, dry gelatin, and skim milk in a medium saucepan, and then cook over medium heat stirring continuously.
2 When mixture thickens and begins to boil, remove from heat. Put the saucepan on a wire rack and let the mixture completely cool off.
3 Once cool, blend in the whipped topping and almond extract.
4 Mix in the strawberries and rice and pour the mixture into a serving bowl.
5 Cover, refrigerate for at least 15 minutes, stir once more, and serve.
