1.5 cup Pineapple, fresh, diced, traditional varieties (or frozen unsweetened chunks)
2 oz sugar free, fat free vanilla yogurt (or coconut or piña colada flavored)
1 tsp fresh lemon juice
0.35 oz SPLENDA® No Calorie Sweetener packets (optional, to taste)


Directions
1 Put the pineapple in the bowl of a food processor fitted with a chopping blade. Pulse, scraping down the sides of the bowl as needed, until finely chopped.
2 Add the yogurt and lemon juice. Process, scraping down the sides of the bowl again, until very smooth. Stir in the sugar substitute, if desired.
3 Spoon into 2 martini glasses or dessert bowls. Serve immediately.
Additional Information
This wonderful dessert does require some advance planning if you start with fresh pineapple.
