Servings
Ingredients
1 cup fresh chopped onion
3 medium garlic cloves , minced
2 lb Broccoli, fresh , stalks peeled, cut into 2-inch pieces
0.5 tsp ground thyme
0.12 tsp ground nutmeg
3.5 cup low sodium vegetable broth
0.5 cup fat free half and half , (or fat-free milk)
1 pinch salt , to taste
1 pinch white pepper
6 tbsp fat free sour cream
1.5 cup plain croutons


Directions
1 In a lightly greased saucepan, saute onions and garlic until tender, 3 to 5 minutes.
2 Stir in broccoli, thyme, and nutmeg. Cook 2 minutes longer.
3 Add stock to saucepan and heat to boiling, reduce heat and simmer, covered, until broccoli is tender, about 10 minutes.
4 Stir in half and half.
5 Using a food processor or blender, process soup until smooth, season to taste with salt and white pepper.
6 Stir 1 tablespoon sour cream into each bowl of soup, sprinkle with croutons.
7 Serve warm or chilled.
