Ingredients
2 medium garlic cloves , minced
2 tbsp margarine
0.25 cup white all purpose flour
3 cup lowfat milk , 2%
1.5 lb fresh chopped spinach , cleaned
2 tsp ground basil leaves
0.12 tsp ground nutmeg (up to 1/4 tsp)
4 pinch hot pepper sauce (4 to 6 dashes)
0.25 tsp salt (up to 1/2 tsp)


Directions
1 Cook garlic in margarine 1 to 2 minutes.
2 Whisk in flour and cook over medium heat 1 to 2 minutes.
3 Whisk in milk and bring to a boil. Continue boiling, stirring continually 1 to 2 minutes or until thick.
4 Mix in spinach, basil, nutmeg, red pepper sauce, and salt. Simmer 5 to 7 minutes or until spinach is wilted.
Additional Information
This sauce works great over farfalle, radiatore, or tortellini.
