Servings
Ingredients
1 lb fresh spinach leaves , stems trimmed (about 4 cups)
0.25 cup minced onion
2 tsp margarine (trans fat free)
2 tbsp white all purpose flour
1 cup whole milk
0.25 cup sour cream
1 pinch ground nutmeg
1 pinch salt
1 pinch black pepper
1 cooking spray


Directions
1 Lightly coat large pot with cooking spray.
2 Wash spinach under cool running water, but do not pat dry.
3 Place spinach in pot, cover and cook over medium 3 - 4 minutes, or until spinach begins to wilt.
4 Strain and discard extra liquid. Move spinach to serving dish.
5 In separate small pot, melt margarine. Add onion, cook 3-5 minutes.
6 Whisk in flour and cook over medium low 1 minute, whisking continually.
7 Whisk in milk, increase heat to medium, and bring to boil. Continue boiling, whisking continually 1 minute or until mixture is thick.
8 Remove from heat, whisk in sour cream.
9 Spoon sauce over spinach and sprinkle with nutmeg, salt, and pepper.
